Background

Fabrizio Cadei was appointed Executive Chef of the Hotel Principe di Savoia, one of the Dorchester Collection, in beginning of 2006. A native of Bergamo, Cadei (38) comes to The Principe with a lengthy haute cuisine background developed in the most prestigious and exclusive hotel restaurants in the world. His began his career in France at the renowned Léon de Lyon, Jean-Paul Lacombe’s 2 Michelin star restaurant, before moving to the Hyde Park in London, now the Mandarin Oriental, where he first met current Principe General Manager, Mr Ezio Indiani.

Cadei returned to Italy in 1994 to oversee the opening of the new restaurant at the Hotel Eden in Rome, where he achieved not only a Michelin star within his first year, but also the “Best Hotel Restaurant in Italy” award. He has deservedly gained a reputation for his skills at organizing and managing grand events and his aptitude for this complex task have been often requested by high profile guests.

With this in mind, Fabrizio Cadei has chosen to return to his country of origin in order to undertake a new professional adventure, marked by a strong determination and a great desire to develop his knowledge, experiment with new creations and fuse to his heart’s delight traditional Italian and international cuisines.

“One of my most ambitious undertakings so far has been to co-ordinate five hotels for the provision of a lunch in honour of Queen Elizabeth II and Prince Phillip, the Duke of Edinburgh” Cadei explains. Bill Gates, Jennifer Lopez, Russell Crowe, Prince Charles, Warren Beatty and Nicole Kidman are just a few of the other many personalities who have been able to experience Cadei’s culinary skills - actors, singers and heads of state all brought together by his haute cuisine. But Cadei remains grounded: “The personal satisfaction and the ability to express your inner creativity are the ultimate compensation for any chef.”

“I settle for nothing but the best and I want to bring a new culinary formula to Milan which will add to the city’s taste for la dolce vita”, Cadei says. “By integrating my international experience into one of the world’s finest hotels, I intend to make The Principe a landmark for epicureans from around the globe.”

He will be responsible for the continuous strive towards culinary perfection.

“We are very pleased that Fabrizio has joined us at The Dorchester Collection which already includes renowned chefs such as Alain Ducasse and Yannick Alleno,” confirms Principe General Manager, Ezio Indiani. “Being Executive Chef at a world class hotel such as The Principe is a challenge to which Fabrizio is ideally suited. I look forward to working with him again and extend to him the warmest of welcomes to Milan.”
